Condo Cooking

If you love to cook, Maui offers a fabulous variety of fresh local fish, exotic fruits and vegetables and a host of ingredients that are hard, if not impossible to find outside of the Aloha State.

With this in mind, we offer a monthly recipe featuring local ingredients, that are easy to prepare in the condo kitchen.

 Recipe of the Month

Oven Kalua Pork

2T Hawaiian salt
1T Aji-No-Moto (MSG)
1/4 cup soy sauce
3 cloves garlic, chopped
1 piece ginger (about 1-1/2"), chopped
3/4 t. liquid smoke, or to taste
2T Scotch
12 large ti leaves
5 lbs. pork butt or shoulder roast

Make a sauce by combining salt, aji, soy, garlic, ginger, and liquid smoke and scotch; set aside. Wash ti leaves, remove midribs, and line baking pan so leaves extend about ten inches beyond pan. Place pork roast in pan in center of leaves and rub prepared sauce into meat. Fold leaves over top and cover tightly with foil, crimping to edge of pan. Bake at 375º F for 5 hours or 1 hour per pound.  Add any left over Scotch to the cook. Shred pork before serving.

Serves 8.
